Ingredients
- 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise (you can also use greek yogurt or sour cream-I will be doing greek yogurt next time around since it's probably much healthier than may)
- 1/4 cup grated Parmesan cheese (I use a mixture of grated and shredded Parmesan cheese)
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
Directions
- Preheat oven to 425°.
- Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs. (After I season the chicken with S&P I sprinkled the grated Parmesan cheese on top of the chicken. Then I spread the mayo mixture which had shredded Parmesan in it. Then once again sprinkled some more of the grated Parmesan cheese. Lastly I sprinkled the bread crumbs on).
- Bake 20 minutes or until chicken is thoroughly cooked.
The first time I came across this recipe I just couldn't imagine putting mayonnaise onto chicken and then adding heat to it. All I could think of is the mayo running off the chicken & the oil separating into a gooey mess leaving just the fat part left to eat.
Little did I know that mixed with Parmesan cheese, and topped with Italian bread crumbs, this could be one of the best things ever created!!
The first time I made this chicken it was delicious!!! My husband assisted and he was the one who spread the mayo mixture over the chicken!! Did it turn out so well because he technically prepared the meal?? Maybe?
The second time I attempted to recreate this meal, it was just disgusting!! The top was soggy, and all you could do is taste mayonnaise with every disgusting bite. Why was it so disgusting the second time?? Probably because I didn't follow directions, didn't measure anything, and applied way too much of the may mixture on top of the chicken!
The 3rd time I made it (yesterday evening), I followed the directions, measured everything, and double checked that I did things correctly. I also had my husband with me guiding me as I spread the may mixture onto the chicken.
And this was the end result... (We got a little lazy with the veggie and just used canned green beans with a tablespoon of vinegar - so good!)
