Asian Honey Chicken

This recipe is just so good - and really easy!!

If you haven't already noticed, I'm a beginning of the week type of cook... As the days go on throughout the week, I'm doing less and less cooking... By Thursday, I'm pretty much ready for some take out... Unless it's Sunday dinner, I typically don't take out a pot or pan over the weekend. Wait, I take that back, I ALWAYS take out the coffee pot because it's a necessity!!

So, yesterday evening (Monday) I wanted something good but, didn't want to necessarily experiment with anything new.  I wanted to spend some time with my baby, so the crock pot sounded easy, so, I decided on making a dish that we have done before, and really enjoyed it!

Ingredients:
*  3/4 pound chicken (of your choice, I used frozen skinless/boneless breasts)
*  1/2 tsp. salt
*  1/4 tsp. black pepper
*  1/2 cup honey
*  1/4 cup soy sauce ( I used the low sodium)
*  1/8 cup chopped onion (or 1/16 cup onion flakes - I used the chopped onion and I did     1/4 cup because my husband and I LOVE onions)
*  1/8 cup ketchup (yes, ketchup)
*  1 Tbs. vegetable oil (I'm not sure what I used, it was in the pantry with no label but it was some type of oil)
*  1 clove garlic, minced (used the stuff out the jar (1/2 tsp.?)
*  1/4 tsp. red pepper flakes (don't have any so I used just a little sprinkle of the red pepper - I don't like things too spicy and the last time when I cooked this I used too much)

Season both sides of chicken with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3 hours or on high 1 1/2 hours (I cooked on high for 2 hours - our chicken was frozen so we needed some more time). Chicken into bite size pieces, then return to pot and toss with sauce. Serve over rice or noodles.

To bake chicken as a 30 minute meal:
Dice chicken and season both sides with salt and pepper, place in 8x8 pan. Pour sauce over chicken and bake at 350 for 20 minutes, stirring after 10 minutes.

Serves 2.
