Monterey Chicken

This was a quick and easy recipe. And it was good too.

Monterey Chicken 


Ingredients:

4 boneless, skinless chicken breasts
*  1/4 cup BBQ sauce (I used sweet baby rays)
*  1/4 cup real bacon bits (used hormel brand)
*  1 cup Colby & Jack cheese, shredded (used Kroger brand)
*  1 14 oz can of Rotel tomatoes, drained (I only had 10 oz cans so I mixed original and mild together)
*  sliced green onions (3 stalks was enough for me)
*  pepper

Directions: 


Preheat oven to 400 degrees. Pound out chicken breasts to flatten. Season with pepper. Grill chicken until no longer pink (I used our George Foreman grill for 7-9 minutes) and place on baking sheet covered with foil. Top each chicken breast with one tablespoon bar-b-que sauce, 1/4 c. cheese, 1/4 c. tomatoes, green onions and one tablespoon of bacon bits. Place in oven and bake until cheese is melted (about 5 minutes).


I didn't do this but you can also marinate the chicken before you grill. (1/4 cup olive oil, 2 T soy sauce. 2 tsp McCorminck Montreal Steak Seasoning. Let marinade for a half hour.

Ooopppsss!!

So, just in case you didn't know -- because I sure didn't -- Rotel canned tomatoes "original" style is HOOOOTTT!!! Which makes complete sense on why that Spinach Chicken Casserole I attempted to make a couple weeks ago turned out so awful!!! It wasn't because I added too much pepper... It's because once again, I didn't follow the instructions and should have used diced Italian style tomatoes instead of Rotel!!!

So, I will try the chicken spinach dish again and actually follow the instructions and used italian style diced tomatoes!!! Oh my!!!

We have stayed busy this summer with activities, parties, and gatherings!

Alex is 10 months old now and just continues to grow in so many different ways. 

His personality is sometimes unknown to us... What I mean by that is that many of his characteristics are not from neither Jason or myself. Jason and I were both quiet and shy babies/children. Alex has a personality that in a way shines. For the most part, he is always so happy with a big smile on his face.  His curiosity just amazes me. He is cautious, yet at the same time a great investigator. He is affectionate with other babies, yet very slow to warm up with adults (especially males).

We signed up for a music class and are apart of a group of probably 7 or 8 other mothers & their children.  During this music class, the parents and babies participate in different activities that include motor skills, listening skills, sensory skills and of course fun! Most of the other babies either sit on or at their mother's laps.  Not Alex!! Alex crawls to the middle of the circle and claps and squeals and just enjoys himself without a care in the world!! When new toys are being passed around in class Alex just gets so excited (possibly even over stimulated). We had to learn about "delayed gratification" in class because Alex was quick to crawl over to another baby and take their toy out of their hand.  He wasn't doing it to be mean (of course), he just saw what he wanted and went for it!! After he got it in his hands, he would shake or tap or whatever the toy was!

As I was telling Jason this story he shook his head and stated, "He didn't get this from me!"  I told Jason the same thing, "He didn't get this from me!"  I was always raised to be seen and not heard! It's funny how genetics play in families because Jason is convinced that Alex's outgoing personality is from his sister, Gina!! Alex just dances to the beat of a different drum!!

So, along with music class Alex continues to play outside as much as possible. We try and spend the majority of the weekend outside! It keeps him from getting restless and gives him the fresh air he needs! Plus we get to play in water and take walks in search of a garage sale!! Not sure how we will handle the next few days since it's hot & humid!!We went to Alex's Laurie's house this past weekend and he got the chance to get into a pool!! He seemed to like it at first, yet got a little cranky the second time around.


Father's Day was great and we had a nice time as a family.  Here is a picture of the boys...

Things that make you go hummm....

Maybe it's not that I can't cook... 

Maybe it's just a lack of desire to learn how to cook and take the time to do it.

Cooked last night and ugggh, it was just a pain. I have an almost 10 month old who wants in the kitchen (blocked by gate), garlic that is burning in the olive oil because I am tending to my almost 10 month old... And a husband who was supposed to be taking the garbage out but ended up MIA (he was out back looking at tree branches that are falling).

So since the meal that I wanted to cook wasn't going my way.(I attempted to make the garlic chicken posted in April). I ended up just throwing some BBQ sauce over the chicken and baking!! It covered up the burnt garlic taste. Once again, who knew brown sugar caramelizes and burns so darn quick when put to heat!!

Southwestern Chicken

This is seriously one of the easiest recipes that even I can do it well...

Ingredients:
1 can of corn (sweet corn regular size 12 oz? 14 oz?)
1 can of black beans (14 oz?)
1 jar of salsa (what ever kind you want. I usually use Chi Chi's because it's thick and not runny)
1 packet of fajita seasoning
4-6 chicken breasts (depending on size) 
Shredded Cheddar Cheese or Mexican Blend


Instructions:
*  Drain corn - place in mixing bowl
* Drain Black Beans and rinse - place in mixing bowl with corn
*  Pour salsa into the mixing bowl with the corn and black beans. Stir and set aside.
*  Sprinkle fajita seasoning over chicken - want to make sure chicken is covered yet you will NOT need the entire packet (in my opinion).
* Cook your chicken. I'm always so lazy that my chicken is frozen so I cook chicken for 30 minutes at 350 degrees. 
* Spread (or spoon) the salsa, corn, bean mix over the chicken and cook for another 15 minutes. Cover with aluminum foil (have no clue why, my mother in law suggested it once).
*  After the 15 minutes spread the shredded cheese over the dish. I don't measure I just cover the top with the cheese. Leave in for another 5 minutes or until cheese is melted.


Serve with rice!


If you have left over salsa, corn, bean mix then use it for nachos the next day!!!

Lazy days....

There are just no excuses, I'm just being lazy and haven't felt like cooking. 

Our summer schedules are getting so busy both at work and at home. 

Take out has been our friend lately  :o( 

Hope to try and get something cooked tonight but I won't be surprised if it's another "fend for yourself" night.

I will be working late the next couple of weeks at work so I have to figure out what's going to be for dinner!! It seems like we have just been so lazy with cooking lately. 

Will have to go through pinterest recipes and see what I can come up with.
