Taco Pasta Casserole

This was another easy and stress free recipe!! Nothing better than a crock pot meal on a Sunday, is an easy casserole. We added a few ingredients so that we didn't have to cook a side dish of veggies!! This fees a lot! Next time, I may consider cutting recipe in half --- although this will probably freeze well!!

It was a team effort for us. We were talking in the kitchen and my husband was getting in the way, so I just put him to work. I got all the ingredients together while my husband put the ground beef on. Nice bonding time and we created a great meal! Extra bonus is that I didn't have to cut the onion!!

INGREDIENTS:

1 pound lean ground beef
8 ounces macaroni
1/2 cup chopped onion
1 (10.75 ounce) can condensed tomato soup (some substituted this with salsa)
1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix  (could probably use less if you wanted to)
2 ounces shredded cheddar cheese
2 ounces shredded monterey jack cheese (didn't have it so just stuck with the cheddar)
1 cup crushed tortilla chips (only used on 3/4 of the casserole so my son could eat it)
1/2 cup sour cream (optional)
1/4 cup chopped green onions (didn't have it, but it makes the picture on website look pretty)

****We added some veggies so that they were hidden in the casserole for my 2 year old to eat without knowing.*****

 
1 small can of sweet corn. Got the kroger brand with no salt added.
1 can of black beans. I would say it was about 14.5 ounces... I didn't want to use the whole can because it seemed like too many beans!! But, my husband hates wasting things, and insisted that I just "dump it all in." Really couldn't tell they were there and my son ate them up!!  

DIRECTIONS: 
1. Preheat oven to 350 degrees 
2. Cook pasta in large pot of boiling water until done. Drain. Set aside.
3. In large skillet, cook and stir ground beef and chopped onion over medium heat until brown. (Yes, put the onion in with the ground beef! My husband was worked up because it's not the way he does it!). Mix in the tomato soup, diced tomatoes, and taco seasoning. If you have a big enough skillet (which we don't) stir in the pasta. What we ended up doing is pouring pasta in casserole dish, and added the meat mixture. Stirred it up in the casserole dish! 
4. Spoon beef mixture into 9 x 13 casserole dish. Sprinkle crumbled taco chips and grated cheese on top. 
5.  Bake for 30-35 minutes, until is melted. Serve with the pretty chopped green onions and sour cream, if desired.

Soy Balsamic Slow Cooker Chicken

This was such a quick meal to throw together in the crock pot!! My son was needing a nap, and I wanted to tackle cleaning out the kitchen pantry. I really had no desire to sit and "cook" so I figured that the crock pot was the easiest thing.  It seemed like it was a messy meal to make -- my 25 month old son insisted on helping to "dump" the ingredients into the crock pot. Very demanding at this age, "Mommy, I DO IT, I DUMP IT!!"  I was glad for the help, even though it created a bigger clean up then it should have.

I've made variations of this dish before, but this one I think is my favorite. Of course I failed to take a picture but here is the one from the website I got the recipe from... And plus, I didn't use the extra garnish which really does make this dish look really pretty!!

Soy Balsamic Slow Cooker Chicken  
 
Here we go, quick, easy, and delicious... Most of the ingredients you will already have in your refrigerator or pantry!!

The real name of the recipe is Soy Balsamic Slow Cooker Chicken but even though This Mama Can't Cook, my husband called it "AWESOME CHICKEN." Which made me feel good considering he has been teasing me this past week about my cooking mishap last week when I measured the pepper for a recipe wrong and cause for some "hot" pepper rice/chicken!!

INGREDIENTS:

  • 2-3 lbs bone in chicken (all I had was tenderloins - and of course, mine were frozen)
  • 1 whole onion, sliced into rings (I'm not sure how to cut in rings, so mine were just cut)
  • 3/4 cup low sodium soy sauce
  • 1/3 cup balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves  (didn't have this at home)
  • 5 cloves garlic, smashed  (used the garlic out of the jar)
  • 1-2 tablespoons peppercorn, cracked (or just use 1/2 teaspoon ground pepper if you are in a rush)
  • 1 tablespoon brown sugar
  • 2 tablespoons cornstarch
  • 1/3 cup chicken broth
  • chives  (didn't have any)
  • rice

DIRECTIONS:

  1. Place chicken and onion in slow cooker.
  2. Pour soy sauce, balsamic vinegar, Worcestershire sauce, bay leaves, garlic, and peppercorn into into slow cooker and stir around, coating chicken.
  3. Add brown sugar, cornstarch, and chicken broth and stir again.
  4.  Cook on low for 5-6 hours, break and shred chicken up a bit (a potato masher works really well for this).
  5. Serve over rice and garnish with chives.

"Lazy summation of 'midwestern' sterotypes."



Lazy Summation of 'midwestern' stereotypes or Just good ole’ fun???

Saw this list of called "30 Things Ohians Love." on someone's face book page last week. It's a list that a New Yorker made on his thoughts of Ohio living.  I'm always up for a good laugh, and immediately clicked on this link to see if I could relate. I shared it on my face book page and got a friends opinion of what she thought of the list. She feels like it is just a "lazy summation of 'midwestern' stereotypes."  I personallyfeel that this list was fun and on target.

Now of course, I can't relate to all 30, but, I sure did get a good laugh out of quite a few of them. Here is my little commentary of what other’s may feel is a “Lazy Summation of Midwestern stereotypes…” 


1. Ohio State football

You are either a Buckeye or a Wolverine. Most likely you are a Buckeye!! I was once a Wolverine but due to marrying a Buckeye, I really had no choice but to convert!!  We actually had to plan our wedding date around OSU football. Saturday afternoons are fun filled days full of football, family, and food!! Go Buckeyes!!

Geeshh, I came back to Toledo shortly before this all went down. At first I was a little confused about it all but. I’m not into sports so I can’t remember but weren’t there some riots at games or some safety issues?? People still get worked up over LeBron!!

Can’t really agree that this is an Ohio thing – although I see lots of people drinking it… If it still tastes like it did when I tried it in elementary school then ick, you can keep it…

Another one I don’t get… I’m fully aware of where our downtown area is, although I can’t get around it unless I have a GPS!! Although I’m slowly getting familiar with the streets and landmarks.

I had to text a friend who lives in Delaware and ask if Sperry’s were as popular out East as they are in Ohio. And yes, they are popular everywhere. I remember wearing these ridiculously expensive shoes in 3rd or 4th  grade, and then again in high school. I guess the boat shoes are making a comeback… Or maybe they never left??

I’m a Toyota girl. When I first moved here someone made a very personal comment about how “it’s just not right to drive a foreign car.” We live near the local UAW hall, and it is made very clear that foreign cars are not permitted in their parking lot. Huge signs posted saying “STOP DO NOT ENTER” to foreign cars. Even my own husband can’t drive my car to work or to his union hall. Ohians are definitely loyal to their automakers (which is the way it really should be, keep jobs in America).

Can’t relate to this one – I’m just not into sports enough to have an opinion… Why wouldn’t you support your state’s professional team (even if they are horrible!)?? It makes sense to me. 
11. Chinese buffets

There does seem to be a lot of Chinese buffets in our town… But, who doesn’t love to stuff yourself silly, and roll yourself out of a restaurant from eating too much good food?? I haven’t been to one since living in Ohio, maybe I should make a point. But how would one chose the best one, there are just so many!

13. Cedar Point

If only I had the stomach of a 20 year old. Looking forward to when Alex is old enough to go to Cedar Point.  Best roller coasters ever!!! So much fun!

Four years being back in Ohio, and I still say “soda.” Pop, soda, cola, coke… Whatever!! Personally, I think of a Grandfather when I hear “pop.”

I have to agree with this 100%. With all of the local restaurants (and Toledo has a crap load of non chain restaurants) it seems like we always end up at a chain restaurant!! And I completely agree with the list above. I know I am one to compare my 2 home states but really, the only time I went to a chain restaurant in Delaware was if I was on a timed lunch break, or was meeting someone out. “Let’s go to Olive Garden” (said no one ever). Now don’t get me wrong, everyone loves panera every once in but if I want a more authentic deli sandwich I want something non-chain and local (i.e Barry Bagels).
Chain restaurants are probably very popular in the Midwest for a few reasons. #1 they are typically family friendly, #2 service is typically fast #3 If you want to stay on a budget you have a variety of choices under $10. Plus, unless you want to spend an arm and a leg, there are no other reasonably priced Italian restaurants in our area – and definitely not one that I want to spend $12 for a kids spaghetti!!

This isn’t always a bad thing.. I think it’s awesome how our local news devotes an entire segment of  Friday Night High School Football. It is a big deal out here. People love high school football!!!  And least we are seeing some positive things happen in our community!!

Honestly, I wasn’t even aware of the pure joy of yoga pants until I returned to Ohio!! Yoga pants are pretty much all I wear. I have possibly 6-8 pairs, different styles and colors. I wear them every day after work (unless it’s too hot and then I change into athletic shorts). I can coordinate the pants for the activity. I have my nicer ones with pockets which is great to go to my kid’s soccer classes, I have my faded & older ones that are strictly for housework/yardwork. I have no intention of working out but I sure look like I’m about to go to the gym!! 
18. Chicken bacon ranch pizza and sandwiches
(Note: I realize that both pizza and ranch have already been listed but, believe me, these particular items needed another reference.)
Best believe that whenever we get a specialty pizza or sub, it’s going to be a chicken bacon ranch one!! Vito’s roll over pizza or subs are the bomb!!!

Never heard of this very competitive game until I moved here!! When I was dating my husband he had to explain it to me and I was confused until I really saw what it in person!! He used to play a lot – even built his own corn hole boards… It’s a big deal out here.

(Note: For a bit, there was a big dispute about which state was actually the birthplace of aviation. Although the first flight took off from Kitty Hawk, North Carolina, Ohioans claim to deserve the title because the home-grown Wright brothers invented the first aircraft in their bicycle shop in Dayton.)

Blah blah blah….. When I think of Kitty Hawk, I think of running down sand dunes hoping not to face plant, not the birthplace of aviation…
