Soy Balsamic Slow Cooker Chicken

This was such a quick meal to throw together in the crock pot!! My son was needing a nap, and I wanted to tackle cleaning out the kitchen pantry. I really had no desire to sit and "cook" so I figured that the crock pot was the easiest thing.  It seemed like it was a messy meal to make -- my 25 month old son insisted on helping to "dump" the ingredients into the crock pot. Very demanding at this age, "Mommy, I DO IT, I DUMP IT!!"  I was glad for the help, even though it created a bigger clean up then it should have.

I've made variations of this dish before, but this one I think is my favorite. Of course I failed to take a picture but here is the one from the website I got the recipe from... And plus, I didn't use the extra garnish which really does make this dish look really pretty!!

Here we go, quick, easy, and delicious... Most of the ingredients you will already have in your refrigerator or pantry!!

The real name of the recipe is Soy Balsamic Slow Cooker Chicken but even though This Mama Can't Cook, my husband called it "AWESOME CHICKEN." Which made me feel good considering he has been teasing me this past week about my cooking mishap last week when I measured the pepper for a recipe wrong and cause for some "hot" pepper rice/chicken!!

INGREDIENTS:

  • 2-3 lbs bone in chicken (all I had was tenderloins - and of course, mine were frozen)
  • 1 whole onion, sliced into rings (I'm not sure how to cut in rings, so mine were just cut)
  • 3/4 cup low sodium soy sauce
  • 1/3 cup balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves  (didn't have this at home)
  • 5 cloves garlic, smashed  (used the garlic out of the jar)
  • 1-2 tablespoons peppercorn, cracked (or just use 1/2 teaspoon ground pepper if you are in a rush)
  • 1 tablespoon brown sugar
  • 2 tablespoons cornstarch
  • 1/3 cup chicken broth
  • chives  (didn't have any)
  • rice

DIRECTIONS:

  1. Place chicken and onion in slow cooker.
  2. Pour soy sauce, balsamic vinegar, Worcestershire sauce, bay leaves, garlic, and peppercorn into into slow cooker and stir around, coating chicken.
  3. Add brown sugar, cornstarch, and chicken broth and stir again.
  4.  Cook on low for 5-6 hours, break and shred chicken up a bit (a potato masher works really well for this).
  5. Serve over rice and garnish with chives.

  1. One thing with this meal is -- drink lots of water. Yikes, the sodium had my feet and hands swollen the next day! I'm even wondering if you substitute the chicken broth with water if that would make a difference?? There is so much excess "juice" that you probably don't need to add the entire amount of soy sauce!! Still, easy and really good recipe - will definitely be making this again soon!!
